First you need to realize that mahogany is an open grain wood and to get a really smooth and even finish, you will need to use a wood filler before you do any staining or varnishing. Secondly, you can get a very smooth finish by using MinWax wipe on Poly. It comes in a gloss finish and makes a very nice finish. I have used it many times and it comes out very good every time. I can send you several pictures of tables I have finished with this varnish. Norm on the New Yankee Workshop uses this also on his projects.
