If you don’t mind the hassle (and hot finger tips), one tried and true method to test hard-boiled eggs for done-ness is to sit the egg standing up (on its wide base) and try to spin it. If it spins evenly like a toy top, it’s done. Unfortunately this method doesn’t distinguish between done and over-done eggs or work for soft-boiled eggs. It also takes some experience getting to know the “spin” vs. the “wobble”. (This is my 90-year-old grandmother’s method that’s been handed down for generations. For reasons of religion and personal taste, our family holiday meals involve large dishes with dozens of boiled eggs. Place the pan over medium heat and bring to a boil. Cook for 2 minutes. Remove from heat and cover with a lid. Allow the eggs to sit for 12 minutes. Drain and cool the eggs for 2 minutes in ice water. Drain and peel the eggs. Note: Eggs that are a couple of weeks old or older peel easier than very fresh eggs.

An old trick – spin them on the counter and then stop them suddenly and let go. If the egg keeps spinning it’s not cooked (because the liquid inside will still be moving and cause it to start moving again) and if it sits still it’s cooked (because the inside is solid and won’t keep moving).
