Fold it in half, then fold it in half again. It should look something like a triangle when you’re done. Repeat with another slice of tortilla bread. Pop them into the toaster. • Get together some pepperoni and chopped peppers. Microwave the two in the oven for a minute or two until soft. • Remove the tortilla bread. Spread with tomato purée, fresh slices of tomato, pepperoni and grated cheese over the top. • Place in the oven part of the toaster oven and cook until cheese melts (about two – three minutes). Remove and allow to cool briefly. Serve.
