• Fry bacon crisp, but not over done. • Set aside in paper towel to absorb excess grease. • Break cheese slices in half. • Slice the avocado half into long strips. • Scramble the eggs in a small bowl. • Heat a 12″ flat frying pan. • Distribute the butter over entire surface of the pan. • Pour the egg mixture into the pan and roll it until the eggs have covered the entire surface. • Lay four half slices of cheese down the middle of the egg surface from edge to edge. • Place the avocado slices onto the cheese. • Place the two bacon slices on top of the avocado slices. • Fold half the eggs over the middle ingredients. • Fold the other half over the first. Place the omelet on the plate and enjoy.
