I made this dish for my family for a get together and now it is requested every time we join for dinner! It’s so delicious and simple to make! The best part is the kids love it too and we all know how important it is to find a meal the whole family enjoys! Pre-heat oven to 350 degrees In large skillet melt the butter. Once butter is melted cook the onion and garlic until tender. Then add chilis, sour cream and cream of chicken soup and mix well. Reserve 3/4 cup of sauce and set aside. Stir cooked chicken and 3/4 cheddar cheese into the skillet and mix with sour cream sauce. Warm tortillas according to package. Fill tortillas with 1/4 – 1/2 cup skillet mixture, roll up and place seam side down into a 9 X 13 dish. Repeat until all the skillet mixture is gone. In a small bowl combine reserved sauce and milk, pour over enchiladas. Be sure and cover enchiladas completely so they don’t dry out. Sprinkle with remaining cheese and bake 30-35 minutes until bubbly.
