it would not be ganache without cream you do not put milk in and if you know what ganache means well it means fool and ganache like so many things in cooking came about through a mistake and surprisingly it has got quite a good shelf life unless its on a cake just think of them truffles that is simply ganache with a coating of cocoa ; i suppose you could use that synthetic cream but the result would not be the same taste and why do you need to keep the ganache for long any way it is easy enough to make as and when you want it
