Have too much zucchini squash? Do you like bread & butter pickles? This is the way you can take care of both. It’s rather easy and can be done all in one day. I freeze them and have them for dinners and holidays in the winter. You would never know they are made from zucchini from the taste of them. In a large bowl combine the zucchini slices & onion slices sprinkle the salt over the top and toss to mix well. Set aside for at least 3 hours. After you have let the zucchini, onions, & salt set for at least 3 hours pour this into a strainer and drain the liquid. Do not rinse. Return to bowl and set aside. In the pan combine vinegar, sugar, turmeric, celery seed, & pepper. Heat just enough to dissolve the sugar completely. Remove from stove and pour this over the zucchini mixture. Toss to mix well. Spoon into freezer containers and add lids.
