Here is a recipe for a really easy pea salad. It is always a hit at parties and is great for holiday gatherings. It is very simple to make and will hold well in the fridge while you work on the rest of dinner. Miracle whip or mayo can be used depending on your preference. Give this a try. It is a great alternative to a regular side salad. Wash and cut your lettuce into bite size pieces. Lay a layer down in a 9′ x 13′ pan. I use a glass pan for a nicer look. On top of the lettuce spread some mayo or Miracle Whip. There aren’t any correct measurements. Just use enough to cover it without soaking it. Sprinkle with peas, pepper, parmesan cheese, cheddar cheese, and bacon bits. Repeat this about four times. The top layer does not need mayo only the cheeses, peas, and bacon bits.
