The Belgium Waffle differs from the traditional waffle in that it is lighter, fluffier, and “taller”. These waffles are made from a yeast batter verses a pancake batter with baking powder. The waffle itself has been around for thousands of years, with the Greeks and Romans making a cooked product between 2 metal plates. It was not until 1964, during the worlds fair in Queens, NY, that the Belgium Waffle made its debut. Restaurateur Maurice Vermersch got the recipe from his wife who created it just before WWII. Vermersch introduced the waffle to the world in the 1964 world’s fair. It was eventually coined the Belgium Waffle, and the rest is breakfast history.
