Everyone will enjoy this quick and delicious dip that is served with apples. I have taken it to numerous parties and potlucks and it is always a hit. It is also a great way to get kids to eat an apple! First, make sure your Cream Cheese is soft. If it’s not, you can put it in the microwave for 20 seconds. In a mixing bowl, beat the Cream Cheese, Peanut Butter, Brown Sugar and Vanilla together until well blended. If your Refrigerate the mixture overnight to allow the flavors to marry, and to allow the brown sugar enough time to dissolve so it isn’t gritty. Take the dip out of the refrigerator about 1/2 hour before serving to soften. Cut apple slices as close to serving time as possible so they don’t turn too brown. You can also sprinkle them with lemon juice to avoid browning. I will typically double the batch if it is for more than my family because it tends to go fast. Enjoy!
