Salmon monterey salad With lemon-dijon vinaigrette is a healthy choice for dinner. Your family and guest will think you ordered from a fancy restaurant and transferred it to your own plates. Makes 4 servings. In a jar or cup with a lid, combine the olive oil (or vegetable oil), Dijon mustard, honey, lemon juice and chopped chives. Cover and shake well. Preheat your broiler. Lightly oil your broiler pan and place 4 pieces of fillet on your oiled broiler pan. Brush your salmon with some of the honey Dijon dressing and broil salmon 4 inches from heat for about 7 to 9 minutes or until it flakes easily with a fork. In a medium bowl, toss together your salad blend, your red seedless grapes and your toasted chopped walnuts. Divide your salad blend between four salad plates. Place one salmon fillet over the salad on each plate. Shake your dressing again and drizzle over each salad. You can garnish with lemon slices, grape cluster or fresh chives if desired.
