• Heat a heavy-bottomed pan or skillet until it becomes hot. • Add the seeds, cinnamon and cloves. Dry roast them over medium heat. Stir constantly and heat until they turn dark brown. • Remove from the heat. Leave to cool. • Grind the roasted mixture with the curry leaves. Mix in the cayenne. Transfer to an airtight container. Use in curries and other Sri Lankan dishes.
