What’s a vegan to do when he or she wants to enjoy or provide their family with delicious – but healthy – flour tortillas? Make them at home, of course! This recipe makes eight flour tortillas. Combine white and wheat flours in mixing bowl. Cut in margarine or shortening until well mixed and dough forms small, coarse particles. Add water slowly and mix until a soft dough forms. It may take a little more or less than the ½ cup, so adjust as necessary. Using your (washed!) hands, knead the dough for a few minutes. The dough should become stretchy and elastic. Divide the dough into eight equal parts and shape into balls. On a floured board, use the rolling pin to flatten each ball into a large circle (about eight inches). The flour tortilla should be less than 1/8″ thick. Place flour tortillas, one at a time, into dry skillet or frying pan
