These bran muffins are easy to make and are absolutely delicious if you can eat them hot when they come out of the oven. They will still taste delicious if you eat them cool but nothing seems as good as “hot from the oven” goodness. Preheat oven to 400 degrees. Meanwhile generously grease 12 cup muffin tin or spray with a non-stick cooking spray. Take the 2&1/2 cups of bran flakes and run it through your food processor or blender until they are coarsely ground. It should yield approximately 1 cup of powder which is what you will need. In a large bowl combine the bran powder mix & 1/4 cup firmly packed brown sugar and then set aside. Meanwhile sift the flours, baking powder and salt together. Then add to bran & brown sugar mixture and combine thoroughly. In separate bowl beat the sour cream and eggs together and then pour it into the dry ingredients. Stir and then add the butter to the mix but don’t over mix it. Fill the muffin cups about 3/4 full and bake for 20 minutes.
