Put medium muffin cups in the muffin tins. Pour 1/2 tsp roast drippings or vegetable oil in each muffin cup. Place the muffin tins in the oven to heat up while mixing the batter. Blend together the flour and the salt. Add the milk. Beat the mix together until smooth, thick, and light. Melt the butter in the microwave, or by leaving it on top of the stove. Add 2 eggs to the flour mixture along with the melted butter. Beat the mixture for 2 minutes using a beater, or until well mixed. Add the batter to the muffin tins. Bake in the oven at 450 for 20 minutes. Lower the temperature of the oven to 350 and bake for another 20 minutes. Remove the muffin cups from the pans and cut a small hole in the side of each pudding to allow steam to escape. Let the puddings cool for 20-30 minutes before serving.
