This recipe is so easy and delicious and with-in an hour and 10 minutes you can serve these juicy and tender Cornish hens. Great for having guests over for dinner, use one hen per person and serve with a fresh salad or wild rice, prefect anytime. Preheat the oven to 400* degrees. Tie the Cornish hens legs together and rub each with 1/2 tsp of oil. Sprinkle with salt & pepper and place in roasting pan. Place the roasting pan into the oven, the hens will need around 40 minutes or until instant-read thermometer reads 165*. Melt 1/2 cup of the preserves and brush the hens with some. Roast 10 minutes and brush again with preserves, repeat every 10 minutes, until temp is 165* on the inside of hens Remove hens to a serving platter; tent with foil. Whisk 1 cup of water, the sauce mix and the remaining preserves into the roasting pan. Blend mixture with the drippings left over, blend well and serve as the sauce on the side.
