How Do You Prepare Kerala Sambar?
• Cook the potatoes and onion pieces in a pressure cooker. Once the potatoes are cooked, open the cooker and add already cooked dal. Now add the other vegetables, Sambar masala and tamarind water. • Cook this for 10 minutes, add chilli powder for taste and salt as per your requirements. • Add the ground coconut. • Add oil in a pan and add mustard seeds, cumin seeds, and curry leaves. Once the mustard seeds start bursting, pour the already cooked sambar to this and cook for some time on low heat; an hour if you have it will ensure that the flavours infuse the dish completely. Serve when cooked through. The sambar is perfect to serve with rice, or dosa or iddly.
