While a bit harder to clean than their stainless steel counter parts, bamboo steamers allow for faster cooking for a larger variety of foods. Most steamers come with at least two trays, and additional trays can be purchased if desired. Chop vegetables coarsely into evenly sized pieces. As long as they fit the steam tray, they will work fine. Add several inches of water to the bottom of the wok or other pot. Set the bamboo steamer in place. Bring the water in the wok to a boil. Turn down to a fast simmer. Steam the vegetables until they reach the desired degree of doneness. Remove the bamboo steamer from the wok and serve the vegetables. The veggies can be served directly from the bamboo trays if desired.
