In terms of functionality, the bones themselves do very little. Muscles do all the work, but the bones provide a point of attachment so that the muscles may be anchored while doing work. How they work is a pretty open ended question. Are you asking about how they grow? If so, that is called osteogenesis, while the removal of bone is called osteolysis. Both processes are always occurring in the body at all times. In healthy humans, the process is in an equilibrium so that the net effect is that bones keep their density fairly stable.
