To ensure ideal freshness, all Carlton Farms pork and beef cuts should be used or frozen within one week of purchase. Fresh cuts, such as steaks, chops, roasts, and tenderloins can be frozen for up to one year in our special vacuum packages. Ham and other smoked products: our Old-Fashioned Bone-in Hams and our Old- Fashioned Boneless Hams can be stored in the refrigerator in the original, unopened packaging for up to three weeks. Other smoked meats, such as our sausages and bacon, can also be kept in the refrigerator unopened for three weeks or in the freezer for six months. Because it can affect quality and flavor, we do not recommend freezing cooked ham, although leftovers that are to be used in soups and casseroles can be safely frozen for up to three months.
