For indoor receptions with air-conditioning, the wedding cake can sit out from the time the reception starts until it is time for the cake cutting ceremony. With outdoor receptions, we recommend that the wedding cake not sit out for more than (2) two hours (depending on the outside temperature and humidity). Although fondant covered wedding cakes tolerate warm temperatures better then all Buttercream cakes, they too have their limits, especially if the filling is Buttercream. They should be kept out of direct sunlight and be removed from warm areas as soon as possible. Sugar flowers will survive the heat better then fresh flowers as long as they stay dry.
