Look for the color to change. Its a rapid process. Shrimp cook only for a few mintues. Peel them after they have cooled a bit. Devein them too.

When dropped in boiling water, The shrimp will start to change color. From transluscent to white. They should be perfectly cooked within two minutes. They should be white in the center. Red is correct – they’ll curl and turn pink. Do Not eat any that don’t curl. Over cooked shrimp is gawdawful…shouldn’t take longer than 5-8 mins.
