The REAL & SIMPLE WAY TO MAKE AUTHENTIC BUFFALO WINGS

  • Purchase wing pieces already cut into two parts, the little drumstick and the wing
  • Wash chicken pieces thoroughly under running cold water and pat to dry
  • Dredge or dip wings in flour or bread crumbs; coat entirely
  • Either fry or BAKE chicken wings at 450 degrees until crispy
  • Toss with MELTED butter (this allows the sauce to stick to the chicken) and Lousiana or Frank’s Hot sauce, a few drops of vinegar and more hot sauce if you want them spicier.
  • Allow to rest for a couple of minutes and enjoy with bleu cheese or ranch dressing, cut carrot sticks and celery.

This is the real deal from a former Buffalonian who was nursed on chicken wings.

10 chicken wings cut into thirds (no wing tips) Vegetable oil (for frying) 1/4 cup of Crystal Louisiana Hot Sauce 4 tablespoons of butter 1/2 cup of all purpose flour 1/4 teaspoon of paprika Dash of ground pepper Dash of garlic powder 1/4 teaspoon of cayenne pepper 1/4 teaspoon of salt Blue cheese dressing Celery Sticks Pour 2 inches of oil into your deep fryer and heat it to 375 degrees. In a small saucepan, melt the butter over low heat. Add your hot sauce, black pepper and garlic powder and make sure to stir it well…mix thoroughly. In a gallon sized zip-lock bag, mix the flour, paprika, cayenne pepper and salt. Rinse your chicken wings under cold water and drain any excess water. Drop your wings into the bag, a few at a time, making sure to shake the bag after each set of wings is added in. When you’ve got all the wings coated, take them out of the bag and put them on something…a tray, or wax paper…whatever you’d like. Refrigerate the coated wings for at least an hour to set t
