There are quite a few misconceptions here ,the color of the freshly broken coconut tells you nothing much about the flesh you are likely to find on cracking the nut open,the colour merely shows coconuts of different varieties. By’ good’ i take it the yellow coconut had a tasty ,edible flesh,the firm flesh means a more mature nut ,left on the palm it would grow harder & firmer,the water would reduce & dry out & finally the nut would develop a dry brown husk,it further dries to form ‘copra’ or dry ,dessicated form of coconut.from which oil is extracted.Coconut should be eaten or used within a few days of harvesting. There is no way you can make the mature flesh reverse to a tender more pliable form,usually hard flesh is grated for use in cooking,coconut ‘milk’ is also extracted from this type of flesh.where coconut is concerned ripe does not mean soft.on the contrary it means harder flesh &that is more difficult to eat.
