By experience, coconut milk and soy sauce do not complement each other as a marinating mix. If you want to cook chicken with coconut milk, no need to marinate it and you can cook them together in a pot, add onion and lemongrass or instead of lemon grass, add fresh sliced ginger (the chicken should first be rubbed with little salt). The amount of coconut milk should be just enough to cook the chicken with a little thick sauce remaining in the pot.
