§229.165(k)(14) and §229.165(o)(6)(A) Item #21 would only be marked if the sanitizing solution was not at the proper concentration. Check the strength of the solution because the detergent and food debris can break down the solution. If the sanitizer is acceptable, mark the violation as a non-critical. Explain the rationale for the washing sequence to the PIC.
