I pretty much only cook Italian food, but I don’t like the texture of Ricotta. I like to substitute mozarella and my recipes haven’t suffered. I knew someone who used cottage cheese, too, but the results were less than pleasing. The taste wasn’t too bad, but the look of it was unappetizing.
