Depends on your variety,if you have heritage turkeys or Broad Breasted turkeys.

The Broad Breasted at 14 to 16 weeks of age and the bird will typically weight between 14.7 to 17.5 

The heritage turkey can be butcherd at  6 months old at least .But if you want them more big and juicier you can wait until 9 months old.
