What are food and environmental allergies or sensitivities?
An allergy or sensitivity is an abnormal adverse reaction to certain substances called allergens. Allergy sufferers react to substances that are harmless to other people, for instance pollen or peanuts. They perceive them as foreign agents. When any such substance enters the body, whether it is ingested, inhaled, touched, or injected, the body tries to defend itself. It releases substances into the blood stream, which initiate a process of tissue inflammation.
