I have found that Garlic is a very easy crop to grow.  I grow the hard neck garlic.  To get the largest cloves it is best planted in the fall in cool climates.  I use the small little bublets that form on the top of the Garlic stem to plant the next year.  What I try to do is use the bublets that are on my largest garlic from the previous year.  I have been doing this for over ten (10) years now and have not had to purchase any garlic from the store.  In fact I have had an excess and been able to sell and give it away. 
If you are interested in growing large cloves add compost/fertilizer to you planting bed.  However I have found that the small cloves have the same wonderful flaver and even seem to store a little better then the larger cloves.
