What are the differences between goat, sheep, and cow cheeses?
•      Sheep and goat cheeses contain lower levels of lactose than cow cheeses and may be more easily digestible for some people. Sheep cheese has a slightly higher fat content and consequently is often characterized by rich, mellow, nutty flavors. Goat cheeses are a little lower in fat than cow and sheep, and often have tangy or sharper flavors, especially when they’re young and milky. Cow cheeses have high levels of lactose (but lower than milk) and medium fat content, relatively speaking.
