What are the grape varieties used in Tokaj ?
Furmint and Harslevelu are the dominant grape varietals. Muscat is also planted but in very small proportions. The Furmint is the best for making the Aszu wine. It produces higher levels of acidity, is more easily affected by the botrytis rot and comes to maturity later (late harvest varietal). The Harslevelu, smaller sized berries, is more aromatic and has less acidity. However, it is the masterful blending of these varietals which makes such superb and complex Aszu wines.
