Unfortunately, mayo contains eggs and oil. If mayo really is a sub for eggs, then I’d try Veganaisse. I get it at the local health food store. Tastes way better than mayo and made from grape seed. I don’t know how strict you are about your diet, but you could try Egg Beaters. Best thing would be to check recipes on the internet or talk to people at your local market. Insofar as using a mix, um, check out what is in the mix. I think an egg or two might be the least of your worries.
