A baked potato salad would be delish & is easy. Bake 5 lbs of red potatoes. Cool. Leave skin on and cut into bite size pieces. Mix mayo, green onion, cider vinegar, a touch of mustard and some salt & pepper (tsp of garlic powder, optional). Amounts will vary depending on potatoes used and how many.
