WHAT DO YOU THINK ABOUT HAVING A SHOP TAHAT SELLS FRESH ITALIAN PASTA?
Well, if it’s “Italian pasta,” that would suggest it’s coming from the Old Country. Unless you’re having it jetted in that day, it’s not fresh. Now, if you’re talking about making your own fresh pasta, based on classic Italian shapes, then selling it in a boutique shop, that might work. You really need to check the demographics of your intended market – are there enough people with eclectic tastes and, more importantly, disposable income to support a niche/specialty shop? Also, most folks who shop at such specialty stores are going to expect some level of authenticity, so be sure you have your sauces nailed. It can be done, but it’s not going to be easy.
