Interesting enough it is illegal to make beer with anything other than malted barley, hops, yeast and water in Germany. But HefeWeizen is the one exception to this rule. The wheat is used to give the beer a very distinct flavor and the high protein content of the wheat gives the beer it’s hazy color. It is fermented with a German yeast strain that creates a banana, bubble gum, vanilla, and a clove type of flavor/smell.
