A. Direct-set yogurt starters are one-time-use cultures. The powdered starter is added to milk and allowed to incubate producing yogurt. Direct-set yogurt starters generally come in bulk packets with 4-20 doses per packet. Each dose will typically inoculate 1-2 quarts of milk. Reusable yogurt cultures are often heirloom variety cultures. A small amount of each batch is used to make the next batch so with proper care, a reusable yogurt starter can be perpetuated indefinitely. Reusable cultures must be cared for and perpetuated at least once a week to maintain their ability to culture milk.
