Popovers are a wonderful treat and really a one of a kind item. They are by no means a muffin and not really a bread, but are some of the best breakfast and brunch food you can have, in my humble opinion. They rise light and fluffy and when baked turn out lightly browned, tall and light and airy inside. There is no leavening used in the recipe. They are best served immediately from the oven and taste best with just butter or add your favorite homemade jam or preserves if you want a sweeter taste. You can also stuff popovers with a savory mushroom mixture for a different flavor. Here is the popover recipe that I still use today.
