1 (14 1/2-ounce) can diced fire-roasted tomatoes 3/4 cup canned less-sodium, fat-free chicken broth 1 1/2 tablespoons tomato paste 1 1/2 teaspoons grated orange rind 1/2 teaspoon kosher salt 1/8 teaspoon coarse ground black pepper 6 boneless, skinless chicken breasts (5 ounces each) 2 tablespoons seasoned dry bread crumbs 2 tablespoons extra-virgin olive oil, divided Half a medium green bell pepper, cut in thin strips (about 1 cup) 1 medium onion, vertically sliced (about 1 cup) 1 (8-ounce) package sliced mushrooms 3/4 cup (3 ounces) shredded part-skim mozzarella cheese Instructions 1.
