The key phrase here would be ‘Freshly Roasted’. We buy top quality beans and roast them when you place an order. The only way to get fresher beans is to roast them yourself. Why are there different levels of roast? Consider that the roasting process ‘cooks’ the coffee bean. Just like a good steak, beans can be cooked light (rare), medium (medium), or dark (well done) to produce the flavors hidden in the bean. Generally, a light roast will produce the earthy flavor of the bean itself. Some consider this under cooked and prefer a medium roast, which still carries much of the bean flavor.
