Any entry level DSLR from Canon, Nikon, Pentax, Sony or Olympus would be fine. The camera body matters very little. What will matter is the lens you use. For stunning landscapes you are going to want a wide angle lens in the 10-24mm range. I would buy the cheapest camera you can get and a wide angle lens. The lens will not be cheap. Wide angle lenses in this size run from about $500-$900 depending on brand.
