PERCEIVED SUGAR CONTENT VINTAGES uses a perceived sweetness rating system based tasting evaluation. The VINTAGES buyers take into account factors such as ripeness, acidity levels, tannin as well as sweetness when assessing vintages products. A wine with a relatively high amount sugar may be rated Medium (M) or even Medium Dry (MD) if there is a heightened amount of acidity. Similarly, a red wine made from very ripe fruit and with relatively low amount of sugar may be rated Dry (D) instead of Extra Dry (XD) due to the ripeness of the fruit, low acidity and tannin.
