The shape makes filleting easier. Believe me, it does make a difference. I forgot our fish knife on year when we went on vacation and hubby caught a bunch of crappies. They had to be cleaned (it was late at night, about 11:00) and all I had was a couple regular knives (one was a paring knife and the other was a butcher knife). He managed to get the fish done, but it was a mess, took forever and was hard to do. Went in town the next morning and got a fish knife first thing!
