What is worse; fructose or galactose?
For dietary decisions one should, for now, probably consider fructose and galactose about equally damaging and add up both fructose and galactose in any given food to make your decision whether to eat it or not. Fructose and galactose are processed slowly by the liver, and do not induce a satiety response, as indicated by their low Glycemic Index. So, if you decide to eat fructose and galactose, eating them in very moderate doses keeps the blood level low and allows the liver to clear them from the blood stream relatively rapidly (within 2-5 hours or so) to minimize damage. So, roughly 1-2 grams per 4 hour period should be the maximum consumption rate for a healthy adult.
