I have had good luck using a Fluke 2635A Data Logger ( also called a data bucket). I don’t know the price, but I have seen re-furbished models for sale. My application used type K thermocouples. For your temperature range, you probably would used those also. The unit does not measure moisture directly, but it does record Resistance, which you could then relate to moisture content. No info on remote access. My application was IEEE-488 since the unit was right next to what I was monitoring. The 2635A does come with a RS-232 interface and you may be able to remote it with a twisted cable. Good luck.
