The high heat process of fortifying it with vitamins and sterilizing it give it a caramelized flavor and a darker color. Sweetened condensed milk also has about 60% of the water removed. During the evaporation process, it’s pasteurized with sugar to help sterilize it. Vitamin A is also added, but no other nutrients are required. Evaporated milk cannot be used as a direct substitute in recipes that call for sweetened condensed milk. Please use PET Evaporated Milk in our recipes, as indicated. When a recipe calls for evaporated milk, using sweetened condensed milk does not perform the same and can actually spoil a recipe that calls for evaporated milk.
