In the long chain fatty acids the carbon atoms are linked to the next carbon atom by atomic bonds. In bad saturated fats all the bonds in the carbon- carbon chain are single, saturated bonds. To make good omega fats we need at least one double bond between the carbon atoms .This makes the fatty acid unsaturated and ready for those important roles.
