Handles are a matter of personal choice. Wooden handles will not become slippery with oil and fat during preparation and can be replaced. Wooden handles require oiling for protection and should not be left soaking in water. Plastic handles are easier to care for, but can get slippery with oils and fats, can melt and can only be replaced if riveted. Steel handles are easy to care for, will never melt nor will they come loose over time (this is because generally the knife and handle are manufactured from the one piece of steel) however they do have a propensity to become slippery if they come in contact with oils or fats.
