Why would a farmer pick unripe fruits/vegetables and ripen them later?

Unripe fruit can take the shipping abuse better than ripe fruit. There is also a large time difference between when it is picked to when we actually bite in, it allows for the ripening process to happen en route, and while in the store and at our homes. There will always be a time when a balance will be struck in order to get all the produce in before spoiling occurs. That’s a money thing… pure economics.
