When it comes to quiche, one way to avoid gluten is to simply eliminate the crust. That’s easy enough! Here is a simple recipe that you can use for breakfast, lunch or dinner. My family likes it plain, but you could easily add some herbs such as parsley, chives, basil or dill to this recipe. Chop the onion and saute it in a skillet with the ground beef. Cook until the beef is no longer pink. Drain the fat. Using a whisk, combine the mayonnaise, milk, eggs, cornstarch, salt and pepper in a large bowl. Stir in the cheese, beef and onions. Divide the ingredients evenly between two greased pie dishes. The heavier ingredients such at the beef will sink to the bottom of the bowl. Use a large spoon to scoop these ingredients into the dishes and spread them out on the bottom. Pour the liquid ingredients on top.Bake at 350 degrees for 35 minutes.
